Cheesy Potato Skins

Beginner skill level, takes about an hour and 15 minutes to make.

Each potato skin is a masterpiece of flavor and texture, with a crunchy exterior giving way to a tender, fluffy interior that melts in your mouth with each bite. But it’s the generous layer of melted cheese that truly steals the show, enveloping the potatoes in a blanket of creamy goodness that’s impossible to resist.

Ingredients:

– 4 large potatoes, about 2 pounds

– 2 tablespoons of melted butter

– 1 cup of shredded Colby-Monterey Jack cheese (4 ounces)

– 1/2 cup sour cream

– 1/2 cup of sliced green onions (5 medium)


Directions:

Step 1: Wash potatoes but do not peel.

Step 2: Pierce the potatoes to allow steam to escape.

Step 3: Bake at 375 degrees in oven for about 45 minutes, if cooking at 350 degrees cook for about an hour.

Step 4: Cut potatoes lengthwise into fourths, carefully scoop out the pulp leaving 1/4-inch shells.

Step 5: Set oven onto Broil.

Step 6: Place potato shells onto pan side down, brush with butter.

Step 7: Broil for about 8 to 10 minutes until crisp.

Step 8: Sprinkle cheese over potato shells, broil for about 30 seconds to melt the cheese.

(Optional): Serve hot with sour cream and green onions.
